This Japanese style chef knife is the ultimate slicing tool. The blade is ground thin and light to glide through meats and vegetables without wedging.
Made from fine grained high carbon 26C3 steel hardened to HRC 62, it has a hard, keen, edge. Handle is Wa style with an ebony bolster, brass spacer, and figured maple.
The blade measures 8.5” long, 2” tall at the heel, overall length is 13.5” Case is Oregon black walnut with some ripple.
